paki post naman po dito mga ibat-ibang recipe niyo ng sisig at nang ma-itry kong maluto. Ito lang po kasi at saka Bicol express ang hindi ko alam lutuiin. Favorite ko po kasi ang sisig. :camile2:

subukan mo nga ito kristel :D


1 k. pork ears (clean shaven)
100 gms pork liver
250 gms pigs brain (optional)
5 pcs medium to large sized, chopped red onions
1 tbs crushed and chopped garlic
4 pcs bay leaves (laurel)
6 tbs vinegar
8 pcs hot chili chopped (siling labuyo)
5 pcs calamansi or lemon juice
water
salt and freshly ground black pepper to taste

Garnishing
1 small bell pepper (green and red), julienned
2 pcs lady fingers chili, thinly sliced diagonally

In a boiling pan, marinate the pig's ear, brain, and liver with salt and pepper, vinegar, bay leaves, garlic and one onion for 30 minutes. Add enough water to cover all the ingredients, and bring to a boil. When it starts to boil, adjust fire to medium, cover until fork tender, and strain. You can tell if a pig's ear is succulent if it is big -- from all the gossip of the farmer's daughter that was funneled in! Broil the strained parts in charcoal until brown. Chop everything evenly and add the onions, calamansi or lemon juice and hot chili. Adjust seasoning. The RIGHT PROPORTION is 1 cup of the chopped pieces to 1 cup onion. The unused portion of the sisig can be frozen for future use.
