Basic BBQ rub (see below)
4 to 4 1/2 whole broiler-fryer
1 can (12 oz.) beer
BBQ Rub:
1 tb. Paprika
2 tsp. Salt
1/2 tsp. Garlic powder
1/2 tsp. Onion powder
1/2 tsp. Pepper
Mix rub ingredients.

Preparing and grilling the chicken:
1. If using a charcoal grill, place drip pan directly under the grilling area, and arrange coals around the edge of the fire box. Heat coals or gas grill for indirect heat.
2. Prepare the basic barbecue rub.
3. Fold the wings of the chicken back with wings touching.
4. Sprinkle rub inside cavity and and all over the outside of the chicken, rub with your fingers.
5. Pour 1/2 cup of the beer from the can (you can drink it if you prefer).
6. Hold the chicken upright, with the opening of the body cavity down, insert the beer can into the cavity.
7. Insert a BBQ meat thermometer so that the tip is in the thickest part of the inside of the thigh muscle but make sure that it is not touching bone.
8. Cover and grill the chicken upright over the drip pan or over the unheated side of the gas grill and 4 to 6" inches from medium heat for 1 hr. and 15 mins. To 1 hr. 30 minutes or until the temperature reads 180 degrees and juice is no longer pink when the center of the thigh is cut.
9. Using tongs, carefully lift the bird to a pan, holding a large metal spatula under the beer can for support.
10. Let stand for 15 minutes before carving. Remove the beer can and discard! Makes six servings. Enjoy!
